Seems lately we live on the beach every weekend. typically beach going families bring hot dogs and hamburgers and we do too sometimes.
But really...beach days are not going to interrupt this families nutritional needs and the little hellraisers I call my boys, will have their veggies..no matter what.
Here is a great little recipe brought to you by the cooker of our family, Karlio himself.
You really don't have to make this at the beach but you will have to cook them up on a charcoal or gas grill.
OK, so here is what you need:
Corn on the cob...sweet corn works the best.
Lightly salted sweet cream butter {softened}
Salt & Pepper
Aluminum foil
A grill
Here is what you do, step by step.
Get out your corn...
Pull down the husks which leaves your corn looking much like this stringy mess...
Tear off all that silky string stuff {whatever it's called}
Here is what your naked corn will look like...
Now, the messy part.
Take out your softened butter and slap that stuff on your corn. Smother it good, don't be shy...you know you love butter just as much as we do.
Mmmmmm.......butter.
Shake some salt and pepper on the butter if you want, we didn't add the salt cuz Karlio and my blood pressure will raise the roof and no pepper cuz Kody would have a tizzy if he saw a speck of pepper on his. We just douse them later.
This is what your corn will look like...
Now, redress your corn by pulling those husks back up....
Roll the whole thing up in foil and oh yes, don't pull off that little handle thing..you'll need it later...
This is what they look like all rolled up pretty sitting next to one of my favorite bags in the world..my beach bag which matches my favorite beach bikini. I just love Ocean pacific, don't you?
OK..enough about me.
Now, put those beautiful babies on the grill and let them cook for about 40 to 45 minutes or so.
Put them on alone...
Or have them chum up with some meat, chicken makes a great partner....
Take them off the grill when they are done and your plate will look something like this...
Peel the foil off {careful hot stuff!}, peel the husks back down and what you get is this...

YUMMMMM!! That corn looks and sounds soooo good. I'll let ya know in about 3 months how it tastes. We don't even like store bought corn until the real stuff (out of local fields) comes out!
Hey, I didn't realize you lost a lot of weight. (Ya never know what ya pulled with your photo programs and since we don't see pics of you very often I didn't realize the loss. CONGRATS!)
And...sorry to the person that suggested mayo on corn. I actually like mayo, but think that sounds gross! :o)
Hope you all have a nice Memorial Day. For the first time ever my family is skipping the home town parade. Every single one of us is sick and couldn't handle the walk up the hill to the cemetary so we're going to take it easy, grab our row boat, and let the kids throw a few lines over the edge. No winded lungs from that!! Besides, it's been over 3 years since the boat has been out!
